Halloween Treats!


Carmel Apple Cookies
What you need:
3 cups all purpose flour
1 Tbs apple pie spice
1/2 tsp baking soda
1/2 tsp salt 
1 c (2 sticks) butter, softened
1/2 cup firmly packed brown sugar
1/2 c granulated sugar
2 eggs
red and green food coloring pastes
1 1/2 tsp vanilla extract
24 wooden craft sticks (preferably green)
1 pkg (14 oz) caramels
3 Tbs water
1/2 c chopped cashews or peanuts

Directions:
Preheat oven to 375 F 
Combine flour, apple spice, baking soda, and salt.
Using a mixer set on high, beat butter, brown sugar, and granulated sugar until fluffy. 
With mixer on low, beat in eggs and vanilla; beat in flour mixture.
Remove 1/3 c of dough and tint green. Tint remaining dough red. Then divide the red dough in half.
On a lightly floured surface role out 1/2 dough to a 1/4 inch thickness. Cut this dough into an apple shape by hand or with a cookie cutter. Place 3 inches apart on a ungreased baking sheet. Place craft stick under each cookie and press lightly. Using your fingers, mold a small piece of green dough into a leaf shape and place on top of each apple.
Repeat using the remainder of the dough. Bake until crisp, not browned (8-10 min.)
Transfer cookies to a wire rack to cool completely.
Heat caramels and water over a low heat, stirring often, until smooth. Set wire rack over a wax paper lined baking sheet. Dip the cookies into the caramel, then into the chopped nuts. Let cookies stand until caramel is set, about 1 hour.

Pumpkin Spice Bars
What you'll need:
2 c graham cracker or *gingersnap crumbs
7 tbs butter, melted
1 2/3 c plus 1/4 c sugar, divided
2 c all-purpose flour
2 tsp cinnamon
2 tsp baking soda
2 tsp baking powder
1 tsp salt
4 eggs
1 can (15 oz) pumpkin puree
1 c vegetable oil
1 can (16 oz) cream cheese frosting
Halloween shaped sprinkles

Directions:
Preheat oven to 350 F. Line a 15x11 inch pan with foil and set aside.
In a small bowl, mix crumbs, butter, and 1/4 c sugar until well combined. Spread mixture into prepared pan. Smooth mixture in pan to form an even crust.
Bake crust until fragrant, about 6 min.; let cool completely.
In a med. bowl combine flour, cinnamon, baking powder, baking soda, and salt. in a separate bowl, beat eggs, remaining sugar, pumpkin puree, and oil; stir in flour mixture. 
Using a rubber spatula, spread pumpkin mixture evenly over the cooled crust in pan. Bake until filling pulls away from the pan, 25-30min.; let cool completely in pan.
Frost top with cream cheese icing. Gently drag the tines of a fork from side to side through the frosting to create wave pattern. Sprinkle with Halloween shaped sprinkles. Cut into 24 bars and serve.

Spooky Batwiches
(bat shaped ice cream sandwiches)

What you'll need:
1 package refrigerated sugar cookie dough (*chocolate is preferable)
*If no chocolate use regular and add the following:
1/2 cup unsweetened cocoa powder and 2 tablespoons all-purpose flour

1/2 gallon vanilla ice cream
Orange and black nonpareils sprinkles)

Shape dough into bats or use a cookie cutter.
Bake at 350F for 12-15 minutes, let cool completely.
Spread with softened ice cream like a sandwich.
Loosely cover and freeze for about an hour or until firm.
Remove from freezer and roll the edges in the black and orange nonpareils. Shake of excess and serve immediately or cover and return to freezer until time to serve. 

 


Krispies

You will need:

  1. Krispies

  2. M&M's

  3. Kisses

Put Krispies in a baking pot/pan. Melt Kisses all over it.  Top with a lot of M&M's.

A yummy treat.
